Mango tomato salsa is my all time favorite go-to recipe for dinner. Mangoes and tomatoes pair beautifully together. The sweetness of the mango, and savory-ness of the tomato, complement each other wonderfully in this raw salsa. This recipe is so easy to throw together in a couple minutes. This raw vegan recipe works fantastic with raw taco shells, mushroom “meat” and coconut sour cream, even guacamole for a wonderful low fat raw vegan Mexican night! It’s also good on crackers and salads.
- 2 large mango, diced
- 2 stalk of celery, diced
- 8 Roma Tomatoes, diced
- ½ jalapeno pepper
- ½ cup cilantro
- 2 green onions
- ½ lime, juiced
- 1 tsp celery powder *Optional*
Chop everything and place it into a bowl. The dish gets even more flavorful if you leave it overnight, so I will often make it the day before or in the morning to let it sit for dinner.
