Low fat raw vegan cucumber noodles recipe

Cucumbers are thinly sliced the long way with a mandolin to turn them into noodles that you can dress with raw mango salsa, raw marinara sauce

Raw foodests often talk about raw vegan spaghetti recipes that are made with zucchini. But what if you don’t like zucchini or squash? I know I don’t! Last time I ate a lot of squash, I got violently sick. So now I only use raw cucumber noodles. They taste much better in my opinion.¬† This recipe is so simple I almost didn’t want to post it. But I know all you squash haters will appreciate it! ūüėČ There’s really not much more I can say, so lets get onto the recipe!

Pair with raw mango-tomato salsa (As in the picture), or raw marinara sauce for a perfect dinner OR a delish low fat raw vegan Fettuccine sauce, which is as followed . The options are endless.

Easy peasy directions!

  1. Take a mandolin and move up and down the cucumber the long way, making thin strips. If you don’t have a mandolin, use a knife to thinly cut slices.

Low fat Raw fettuccine sauce recipe:

  • 2 cups corn
  • 1/5 cup hemp seeds (Thanks to my friend to turning me onto hemp seeds)
  • Pepper, to taste
  • Garlic and onion, to taste

Pulverize it in the vitamix until it becomes smooth and creamy! Or you could use a food processor for a while until it becomes buttery smooth.
