Fettuccine-Style Noodles [Low fat raw vegan recipes]

Raw foodests often talk about raw vegan spaghetti recipes that are made with zucchini. But what if you don’t like zucchini or squash? I know I don’t! Last time I ate a lot of squash, I got pretty sick. So now I only use raw cucumber noodles. They taste much better in my opinion. This recipe is so simple I almost didn’t want to post it. But I know all you squash haters will appreciate it! 😉 There’s really not much more I can say, so lets get onto the raw vegan recipe!
Pair with raw mango-tomato salsa (As in the picture), or raw marinara sauce for a perfect dinner OR a delish low fat raw vegan Fettuccine sauce, which is as followed . The options are endless.

Ingredients
Fettuccine Alfredo Sauce
- 2 cups corn
- 1/5 cup hemp seeds Thanks to my friend to turning me onto hemp seeds
- Pepper to taste
- Garlic and onion to taste
Noodles:
- 3 Cucumbers
Instructions
Take a mandolin and move it down the cucumber the long way, making thin strips. If you don't have a mandolin, use a knife to thinly cut slices. But be careful!
- Pulverize it in the vitamix until it becomes smooth and creamy! Or you could use a food processor for a while until it becomes buttery smooth.
