Vegan Superfood Spirulina Energy Balls Recipe

These Superfood energy balls are a perfect easy vegan recipe for a boost in lasting sustained energy when you're feeling busy, hungry and tired.  With Hawaiian Spirulllia, turmeric and maca powder, they're the perfect superfood.

Ingredients

  • 1 cup raw cashews or any nut of your choice
  • 1/4 cup packed dates soaked for 15 minutes
  • ½ teaspoon maca powder
  • ½ teaspoon pink Himalayan sea salt optional
  • 1 teaspoon ground turmeric
  • ½ cup puffed rice
  • 1/4 cup Hawaiian Spirulina
  • 1 tsp cinnamon

Instructions

  1. First, add the soaked dates and cashews into to the food processor. Process until a crumbly paste

  2. Once they're ground up and mealy, add the maca powder, pink sea salt, and turmeric.

  3. Process for about 10 seconds, use a rubber spatula to scrape down the sides, and process again for another 5 seconds until it balls up.
  4. Transfer to a bowl, add the puffed quinoa.
  5. Fold it together until the puffed quinoa is evenly distributed throughout.
  6. Roll into balls. You can use a ice cream scooper to make it easier, or just use your hands.

  7. Next, roll the energy balls around in spirulina and coat well.

  8. Stores in an airtight container in the fridge for about a week. Or you can freeze these by putting them in a ziplock baggie with the air taken out.

Recipe Notes

If you don't like spirullina, or don't have spirullina, you can coat these superfood energy balls in either coconut flakes or cacao powder.. or both! Chocolate coconut superfood energy balls has a nice ring to it.
