  • 1 19 oz can Chickpeas, chilled Reserve the liquid
  • 1/2 cup coconut sugar (Ground fine)
  • 1/4 tsp cream of tartar
  • 1/4 tsp ground vanilla bean powder

  1. Pour the juice of one chilled can chickpeas, along with coconut sugar, cream of tartar and ground vanilla bean powder into a chilled metal bowl.

  2. Whip together the ingredients with a stand-alone mixer until it forms stiff peaks.

  3. Getting stiff peaks will take about 15-20 minutes with a stand alone mixer, and about 40 minutes if you're using a hand-held electric whisk. If you haven't made whipped cream before, it might not look like it's doing much, but just give it time and it will get fluffy!

  4. Serve immediately. Great with banana ice cream, pies or cakes!
